#9 yeast, koji cultivated in small containers, and long-term fermentation at low temperatures. These are the fundamentals of Ginjo sake brewing.

Made with Yamada Nishiki rice grown in all the various Special A regions of Hyogo Prefecture. The differences in the rice from each region give complexity to the flavor.

You can enjoy this sake gently chilled, in a round Burgundy type of wine glass, to emphasize the light and fruity flavor. This sake goes well with salad with tomato or fruits, saute or stew of scallops and prawns, or fish carpaccio.
