In pursuit of the ultimate daiginjo sake, we used Hyogo-grown Yamada Nishiki rice, said to be the king of sake rice varieties, which was grown on contract. We are so proud of the resulting sake, brewed with techniques hat have been handed down over many years, that we’re willing to call it a work of art in Japanese sake.
