☆About the sake brewery
Koikawa Sake Brewery is a sake brewery loved by historical novelist Shuhei Fujisawa, and will celebrate its 300th anniversary in 2025.
Koikawa Sake Brewery is particular about making junmai sake, and it has a dry taste that goes perfectly for “drinking with meals”, so you won't get tired of drinking it.
The brewery uses locally sourced ingredients such as yeast, rice, and water, and the local brewers have inherited the techniques.
This brewery has received the GI "Yamagata" designation and are working on sake brewing from a traditional and new perspective.
☆Taste
“Kameji Kojitsu” is a Junmai Ginjo sake made with “Kamenoo”, a rare variety cultivated in Shonai Town, Yamagata Prefecture, which has a history of being called the phantom rice.
